We ended up in Montreal unexpectedly and with no concrete plans. With the city just shaking itself off post-COVID it's not easy to know which restaurants are open; indeed, Beaumont's sister restaurant Toque! is yet to open, but Beaumont was. We were lucky enough to...manage a convenient reservation and were treated to one of the finest meals we've experienced to date. The atmosphere and décor at Beaumont is modern but soft, with plenty of space and just enough light; the attention to detail is what you would expect from a restaurant that takes itself seriously, and the service was absolutely convivial and efficient (in both languages). We started off with beef tartare, which was excellent although could have used a bit more mustard, and oysters which were perfectly served; this was followed by guinea fowl, which my partner avers is one of the finest dishes they've ever had, and I had the pork tenderloin: truly wonderful, with a really unexpected twist in the dashi base. For sides we had the sautéed mushrooms (wonderful!) and the eggplant (less successful), and washed it all off with a truly fantastic bottle of Cavalchina Amedeo. The wine, by the way, was selected by their resident sommelier Claire, and was a perfect match to the meal! Overall, this was one of the finest dining experiences I can recall; it wasn't cheap by any stretch, but certainly justifies its price point. I hope I get to visit again some day!More
