Meticulously made delicious dumplings; steamed, pan fried and in soup. The chef, an Asian woman, was cooks well, and also conscientious about her food; we ordered pan fried dumplings, 8 pieces. She brought 4 pieces first and explained that other 4 pieces were cooked too...dark for her standard. Then brought 6 pieces of perfectly cooked dumplings. She insisted offering 2 extra dumplings for apology. The steamed dumplings were perfect too. I am a Japanese woman growing up eating many good dumplings, but her dumplings were truly good. Delicate and almost translucent skins with filling, all delicious. I was asking questions to the server, maybe her husband, about how the broth is made, basically if it is from scratch or not. Then the chef brought be a small bowl of soup broth for me to taste. It was delicious. Light but deep flavor, a fine broth to accompany dumpling soup. A small gem. Next time we go to Victoria, we will be back without fail.
