My problem with Asian, non gastronomic level, cuisine is the soggy soft texture of food that's been cooking all day long. Immediately here one has the sense of on-the-spot preparation. Though it doesn't have the same flavors of Cambodia, as when I was there, it...does have the superior, pure meats ie. not gnarly and without the fat and bones. I was impressed with the quality especially considering it sits in a small shopping center. But that's typical of Asian as well, all the emphasis on the food and less on outside appearance.
