Or it's $$$-worthy quality but then is so fusion-y that it just makes me miss the real thing. Islas gets it perfectly. It tastes like the best version of authentic Filipino food because, not only is the taste spot on, but the chef cooks the food with absolute quality care. We ordered a bunch of stuff and the standouts are: - Kare Kare Bagnet: Pork belly in peanut sauce and a side of bagoong (shrimp paste). The crisp of the pork was sooooo well done, and the texture was a nice contrast to the rich peanut sauce. - Chicken Inasal: Wow! The skin was blackened sweetness, and the chicken was perfectly cooked so the inside was nice and tender. Plus the serving size was for 2 people (2 huge leg-thigh portions) - Chicken Wings: Huge wings in lechon sauce. Need a say more? Wednesdays are wing night ($1/wing). - Halo-Halo: Traditional Filipino dessert done right. A big scoop of ube (purple yam) icecream topped with a mound of bananas, coconut and jelly covered in milk and shaved ice. All the best parts of halo-halo without the distracting bells and whistles. Also, in true Filipino fashion, there was unlimited rice and amazingly warm service throughout the meal.
