We were on the hunt for a viable option for some brunch soufflé pancakes near where we were in Broadway. Fufu Cafe came into our maps radar - we called for a reservation which is a good idea to get on their list. We decided...to take a brisk 10-15 minutes to walk from our hotel. The shop is small and easy to miss walking by - but has character once you enter their doors. Clean and well-coordinated interior decors, although the outside can use some more signage to indicate the cafe. They do have pandemic precautions in place which we appreciated. The staff knew what they were doing, offering some tips, and pointing us to some tips. They do not serve the savory soufflé on weekdays, only on the weekend. They also have all sorts of cafe drinks that can go well with the soufflé. We were seated near the "baking room" where we can see how the soufflés were carefully being made. Our choices of cold Matcha Latte and cold Ruby Chocolate Latte were served as we wait on our soufflés. The Matcha Mochi soufflé came to our table first. All we can say is that it is an Instagram-worthy kind of plate. The next best thing was that it was not too sweet and there are many components on the plate we enjoyed. There are three soufflé, covered in light matcha whipping cream, matcha ice cream, matcha syrup, and some tapioca pearls garnish. The Tiramasu soufflé was another visual treat. The soufflés were stacked on top of each other, covered with melted marshmallow with a dusting of cocoa powder. Some chocolate shavings and nuts garnished the plate, and a tiny pot serving of chocolate syrup and a scoop of mocha ice cream. All we can say is, once you start eating the soufflés it will go as quickly as it was served - the soufflés were a delightful fluffy treat. We truly enjoyed our brunch and we promised ourselves to come back on a weekend to sample their savory soufflés items. We did not regret picking this cafe for a taste of fluffy soufflés.
