Among food enthusiasts, colleges that run restaurants as part of their cooking programs fall into the "best kept secrets" category. These places often offer exquisitely prepared food served by people who are aware that they are being graded on how well they serve the customers,...all for a fraction of the price of a "real" restaurant. VCC already had one such operation - J.J.'s, which is excellent - and in the past couple of years it has added another: Wild Salmon. In addition to the previously-mentioned benefits of this kind of restaurant, this one has two other advantages: first, where else can you find a top-end restaurant that serves variations on native American cuisine; and second, here you can know that you're helping aboriginal young people get their start in the food industry. Admittedly, the service can be uneven, since you're being served by young people who may never have worked in a restaurant before, and in some cases may never even have eaten in a restaurant before, so it helps if you can stay relaxed and enjoy the experience.
