Having been here for more then 1/2 dozen times, finally, I am putting in my 2 cents. Ramen shops in Vancouver had seen its ups and downs, about 10 yrs. ago, there was a surge of Ramen eateries in the downtown core mostly around Robson...Street, and one of the oldest one still exist: Kintaro Ramen ( on Denman ), it started a craze that lasted for a few years and then it died down a bit, fast forward to about 4 yrs. ago, the surge of Japanese Regional Ramen becomes the second wave of more sophisticated ramen. Representing Fukuoka region of Japan, Danbo highlights their Tonkotsu ( Pork Bone ) Broth, the rich creamy broth is the soul of this region's ramen. With different ingredients added as toppings or different levels of fat content in the soup, you can customize your bowl of noodles just like when you order your coffee from a Barista! You can also choose the thickness and the doneness of the noodles. Great care is taken when the Noodle "Baristas" are preparing each individual bowl, you know this when you get your very own bowl as each one is done separately and hence the long line at the door! Come and experience yourself, take some time to study the menu and imagine in your mind what would be your perfect bowl of Ramen and then order, you may need a couple of visits to hone down your exact liking of the noodle doneness or combinations of toppings, but I am sure each time you will learn more about the intricacies of this "art" we call Ramen!More
