Based on our first visit to this chef's 3rd gourmet Italian restaurant in the city, we sat down to a very fine meal (3.75 stars). First a wee appetizer of excellent olive oil covering a thick grainy balsamic. Super lead-in... My wife ordered his Milanese pork cutlet with Capricciosa salad and polenta fries: the cutlet with long bone-in was super tender - he must order from a specialty butcher - and tasty, the salad included large artichoke hearts with plenty of nutritional greens and reds, and the fries were good with a light cheese sauce for garnish. Well presented on a large wooden platter were these three separated dishes. I ordered his nicely-flavoured lasagna, but as is usual with many deep dishes, the combined flavours were only okay. The next day re-heated at home 'twas only okay. Ingredients in any cassarole dish must combine well to make a truly synergetic impact... Our server Brad was very pleasant and shared some of his personal story on becoming a server first in his father's restaurant. The decor was black and gray, that, in my opinion, needs lightening up, especially as the smokey back windows don't allow much natural light to penetrate. I'm not sure why many of the best restos in Calgary go with such blacks... We will consider returning some day to try their 'Italian Job' 3-course meal for only $35/person. Try Cotto? If you like good Italian cuisine, this should reward you plentifully. And a glass of deep rich red would likely herald the day...
