We dined at Bacchus as part of the Wedgewood’s “elopement package.” The package included dinner for two, but we ended up with a party of 8 and paid standard meal rates; however, Stacey, our primary contact, performed yeoman’s duty and ensured we were able to...dine privately in Bacchus’ library room. Bacchus Restaurant is already a luxurious space, but dining privately – in a room with beautiful wood details in warm and dark tones – adds another level of beautiful complexity and elegance to one’s overall experience. I won’t go into detail about what our party ordered – a number of starters and literally everything from the Entrees section – but I will say that Executive Chef Montgomery Lau, formerly of Market by Jean-Georges and Diva at the Met fame, clearly demonstrated how and why he’s one of Vancouver’s top chefs. Each dish that was ordered, from the Maple Ginger Butternut Squash Soup to the Sablefish Poached in Citron Tarragon Butter, was simple in its plating but the flavours were deceptively complex. Consider the aforementioned sablefish, for example. This fish is naturally rich, but Chef Lau knows how to balance that richness with other flavours on the plate. The accompanying carrot ginger puree plays well with the fish and offers a slightly sweet counterbalance. Really, Bacchus, thanks to Lau, is a tour de force in West Coast and European flavours. Of course, an outstanding meal is only part of the experience. Service throughout was absolutely impeccable. Our server – I unfortunately forget his name – was perfect. He checked on us regularly and offered the right balance of professionalism with good humour! In a word, he struck us as genuine – someone who cares about the guest experience. Bravo! FOOD: 5/5 SERVICE: 5/5 VALUE: 5/5 RECOMMENDATION: Bacchus has been open for 37 years and it’s easy to see why. The atmosphere exudes luxury; the food is phenomenal; and the service exemplary. We were made to feel like VIPs and this made our special day all the more significant. Thank you! Very highly recommended!
