Spinach and Strawberry Salad

Salad

 

8 cups fresh spinach

2 cups sliced strawberries

1 cup almond slivers

1 cup shredded mozzarella

 

Toast almonds till golden brown. Combine spinach, mozzarella cheese, and strawberries in bowl and toss.

 

Sweet Poppy Dressing

 

⅔ cup olive oil

½ cup sugar

⅓ cup lemon juice

½ tsp salt

1 tbsp poppy seeds

2 tsp finely chopped onion

1 tsp Dijon mustard

 

In small container, combine ingredients and stir well. Dressing can be prepared ahead and refrigerated.

 

Toss salad with dressing and garnish with almonds.

 

Makes 4 servings
