7 or 8 small or new potatoes,quartered
1 cup diced celery, leaves included
1/4 cup diced red onion
1/4 cup diced sweet red pepper
1/2 cup sour cream
1 Tbsp smooth Dijon mustard
1-2 tsp white balsamic vinegar
A thick handful of each: fresh cilantro and chives, finely chopped
3 sprigs fresh oregano, finely chopped
salt and pepper to taste
Combine all dressing ingredients and set aside to blend, about 15 minutes. Boil potato pieces until fork tender. Drain and cool.
In a medium bowl, toss potatoes, celery, onion, peppers and dressing.
Season as you wish with salt and pepper.
