Among the many delights in Indian Cuisine, Dosa’s and Curries shine brightest.
A dosa is a rice pancake made from fermented batter and shares much of its appearance with a crepe. Originating from South Asia, it features a regional staple, rice and black gram – finely ground and seasoned into a smooth batter. Often paired with coconut chutney and sambar (spiced lentil soup) and cooked with copious amounts of ghee, it brings on a savoury experience second to none. As per Sangam literature, its origin is deeply rooted in time, made in Tamil societies as early as 1st century AD.
