Sun-dried Tomato Dressing
Local Ingredients
Instructions
1/3 cup fresh lemon juice (juice from 1 lemon)
1/3 cup extra virgin olive oil (use some oil from the sundried tomatoes)*
1/3 cup liquid honey
1 clove garlic crushed
1/2 tsp dried basil
1 tsp dried oregano
7 - 8 pieces sun-dried tomatoes, quartered
4 - 5 fresh tomatoes, quartered
Salt to taste (optional)
Place all ingredients in blender and process to desired consistency.
*Tip: Measuring oil in the measuring cup first makes the honey come out of the measuring cup without sticking.
