5 large carrots peeled
2 tbsp orange juice
1 tsp orange zest
1 Tbsp maple syrup
1/4 tsp toasted sesame oil
2 tsp sunflower oil (or your favourite nut oil)
1/2 tsp crushed green peppercorns
1 Tbsp finely chopped cilantro (optional)
Slice or julienne the carrots and steam. Combine all other ingredients in a small bowl and mix them thoroughly. When Carrots are steamed, drain and toss with dressing. Allow to stand, covered, 5-10 minutes before serving to ensure that the flavours combine well and infuse the carrots. Toss once more before serving. Garnish with sprig of cilantro.
Variations: black sesame seeds, nuts, dried cranberries can also be added to the salad for colour and crunch.
Serves 5-6 people.
