This recipe from Taste Local Taste Fresh (2007) was a partnership between Exhibit Cafe in Kitchener and Diversity Gardens.
A simple salad that highlights the flavours of the Heritage Tomatoes. No vinegar is used in the dressing, though adding balsamic vinegar is a nice touch. This recipe is a great way to introduce omega 3-rich golden flaxseed oil to the diet without compromising taste. The golden flaxseed oil's distinct flavour is mellowed when paired with hazelnut oil and rosemary. This recipe will produce extra dressing, which can be kept in the fridge for up to a week. Dressing 125mL golden flaxseed oil
125mL hazelnut oil
2 tbsp organic rosemary, finely chopped
1 tbsp organic lemon juice
Salad 2 large heritage tomatoes, cut into thin wedges
1 red onion, thinly sliced
Put dressing ingredients in a mason jar and shake. Toss vegetables in dressing and refrigerate for two hours before serving to allow the flavours to blend. Serves 2
